Shelf-Life and Food Safety of Eggs in Norway Scientific Opinion of the Panel on biological hazards of the Norwegian Scientific Committee for Food and Environment

This VKM scientific opinion assesses whether the assumptions behind EFSA's 2014 opinion on table egg safety and shelf-life apply under Norwegian conditions, and whether Norway can justify a longer shelf-life. The assessment combined literature review, targeted data analysis, predictive microbiology modelling, consumer survey data and evaluation of the Norwegian production chain. VKM finds that Salmonella Enteritidis vertical transmission is not relevant in Norway and that maintaining the cold chain (≤12°C) substantially reduces microbial growth risk. The committee concludes that a 35-day shelf-life is safe for raw, non-heat-treated eggs in Norway provided cold chain is maintained.
